Stalking Amoy Street Food Centre in the morning, I stumbled upon this wanton mee stall that was already opened while other stalls were just getting ready for the lunch crowd. There was a short queue, so I figured that it wouldn't hurt to try a small serving (before going for the other stalls later).

When I reached the front of the queue, this heap of leafy kai lan stems, bright green with a shiny sheen from oil caught my eye.

Intending to suss out the best of Amoy Street Food Centre, I just ordered this small serving of wanton mee to try (price $3.50).

It's an old school type of wanton mee with soupy sauce which tastes sweet spicy savoury with a tinct of aromatic oil but no lard.

The noodles were slender but had a nice springy crunch. Every strand was well coated with the sweet spicy savoury aromatic sauce. The flavours were relatively mild, and would be better for me if it were more robust. Asking for more chili sauce should help get more kick into the soupy sauce.

The char siew slices were lean and have neither the softness nor juiciness of fat. Still, it was flavourful and tasted like less intense bak kwa.

The two slivers of kai lan were expertly blanched. They were tenderly crunchy and juicy with a slight sweet savoury overlay from the sauce.

The opaque soup had a round body with savoury sweet flavour. I can taste the umami of dried cuttlefish in the soup.

There were five good size wantons inside the soup (so generous). The thumb size knob of minced pork is seasoned with soy sauce, sesame oil, pepper etc.

Pleased with Wah Kee's wanton mee, I got up to stalk other stalls at Amoy Street Food Centre.

Then, I spotted another Wah Kee customer having this char siew and stewed mushroom combo wanton mee. I snapped a shot of her wanton mee - yeah, Tony is terrible like that... ๐Ÿ˜…

I wandered around Amoy Street Food Centre and wondered whether I should have the mushroom mee as well. To have the mushroom mee would mean giving up the hunt for another good food stall for the day as I have only a tiny stomach. (I am alone on an advance party mission ๐Ÿ˜„ )

The same springy crunchy noodles wrapped in sweet spicy savoury aromatic sauce, marvellous kai lan and now with spongy stewed mushroom saturated with savoury sweet sauce. (The mushroom mee does not come with any wantons.)

Pro-tip: The best option at Wah Kee in my opinion is the char siew and stewed mushroom combo (because you get the best of both worlds plus wantons). I don't know where else in Singapore or anywhere in the world where we can get this wanton mee combo.

I wonder if we can request for extra kai lan at additional cost. It will be a perfect trinity of stewed mushroom, char siew and kai lan.
