Thien Sin Prawn Mee • Foochow Prawn Noodle in Miri Sarawak 天星虾面 • 福州炒煮面 • 先炒后闷

We've got an early flight to catch at Miri Airport, so the plan was to breakfast at Thien Sin Prawn Mee on the way to the airport. It's a great way to taste one more iconic Miri dish and leaving with the longing to come back for more soon 😅

Thien Sin Prawn Mee is a large corner coffee shop at the ground floor of CitiHotel (3 star). It is located conveniently between Miri city centre and the airport.

Thien Sin has several items on their menu which is pasted on the outside wall.

We had their signature prawn noodle, obligatory kolo mee, Hockchiew mee sua, and Kong piah. At Thien Sin, only the signature prawn mee left a lasting impression.

The signature prawn mee is made with large local river prawns (though I can't remember from where exactly in Sarawak).

The noodles and soup are prepared separately. This style of prawn mee is known as 福州炒煮面 Foochow fry stew noodle where the process involves 先炒后闷 or fry first, then stew.

When done, the stir fried noodles and stewed prawn soup are assembled into a large bowl.

Can't see the noodles because they were under the stack of prawn and thick brown soup. This cost RM35 and is enough for me or two small eaters 😬 There are also RM50 and RM70 serving sizes.

The soup was thick and rich with layers of robust umami savouriness. One part of the soup tastes like savoury garlicky Fuzhou style Hokkien mee sauce and the other like ultra crustacean umami savoury prawn soup. There was a bit of wok hei taste from the caramelised sauces in the soup. I like the super flavourful soup.

The noodles were thick, spongy, springy tender. A few of the strands were slightly charred with the taste and aroma of wok hei.

The prawn's tender chewy meat itself was just slightly crustacean sweet - most of their flavours given up to the ultra umami soup.

The creamy head butter of the river prawn. There was not as much of it as the legendary Ayutthaya river prawn but the umami taste is equally, if not more intense. But, Ayutthaya giant river prawn meat is much more flavoursome. My other favourite giant river prawn places are at Restoran Green View in Petaling Jaya near Kuala LumpurSang Kee sang har meen in old downtown Kuala Lumpur, and in Tanjung Tualang in Perak state.
