Mr Song has been frying char kway teow for nearly 20 years (since the 1990s).
Mr Song makes a no frills char kway teow.
To fry the noodles, Mr Song just uses vegetable oil, water, blended sauce and chili (if requested). Then, there are chye poh (dried radish), fried garlic, shelled prawns, fresh blood cockles, and chicken eggs.
That's all.
Mr Song uses no lard in his char kway teow.
I can smell that wonderful aroma from Mr Song's wok while waiting for my fried kway teow.
My plate of piping hot freshly fried char kway teow for RM5.50 (2017 price | today RM8).
There were three good sized shelled prawns. They have a nice sear and were sufficiently fresh.
A few fresh, small blood cockles (see ham).
The fried egg is served in one piece instead of being scrambled and stir-fried into the noodles (as is usually done elsewhere).
The fried kway teow is laid hot on a small square of banana leaf - a nice touch which I appreciate.
Mr Song uses kway teow kia which is more slender than regular kway teow. It is tender but firmer and more chewy than regular kway teow. For char kway teow, I personally prefer regular kway teow (flat rice noodles).
The kway teow kia is well fried though there was little caramelised char outside. The blended sauce has a robust savoury flavour which is layered by umami savouriness from chye poh, aromatic fried garlic and briny taste of blood cockles.
The taugeh (bean sprouts) were crunchy, juicy and sweet.
👉 This is a good char kway teow, and that means a lot as good char kway teow are rare in Malaysia and Singapore these days. Lee Heng kopitiam's char kway teow's main selling point is Mr Song's robust blended sauce. And, if you are one who doesn't want lard in your CKT, there's the added bonus that this tasty CKT is lard free.
