Today, a friend sent me lunch from a just opened nasi padang stall, Encik Enam at 285 Changi Road. Yeah, Encik Enam has the audacity to open smack in the middle of a COVID "lockdown", so it piqued my interest. We had a few dishes and were particularly smittened by their rendition of tauhu telur and spicy "seafood shovel".
The tauhu telur cooled down a little and wetted the bottom of the paper box during transit. So, we popped it in a pre-heated toaster for a couple of minutes.
We like Encik Enam's tauhu telur (price $10.90). The tofu and beaten egg blend was soft like custard and tasted sweet eggy. Delicious. The frilly egg fringe (like floss) on top added interesting fluffy crisp texture.
The customary savoury, sweet, spicy hot kicap dip (soy sauce) was also tasty. It's Encik Enam's own blend - I like the taste profile.
In the menu, it is Seafood in the Tub (Shellout).
It's like Louisiana seafood boil but with Malay spice mix. The taste of hae bee hiam (spicy fermented prawn) was pronounced, enriched with umami from the fresh crustaceans and sweet juices from the vegetables. Power ๐ช
In turn, the seafood and vegetable infused the rich umami-savoury, sweet, spicy chili flavours. In particular, the swimmer crab body was engorged with sauce, and the corn was smothered with savoury spicy sauce which it balanced with its own juicy sweetness.
Boomz, we love this Seafood Shovel (or Indonesian style Louisiana boil). Note to self: Grab a tub for parties or whenever you are in the mood for beers!
It is made with chicken wing mid joints (my favourite part). The mid joints were cut in two, lengthwise. The seasoned wings were lightly battered, deep fried and then stir fried to coat with a savoury sweet spicy chili kicap sauce. We quite like it - it's like Indonesian style Korean fried chicken wings (are those still in trend?). I believe it will be even better straight out of hot oil (the fried wings lost a bit of crispness in transit but flavours were intact).
Pan roasted chicken thigh slathered with savoury tangy BBQ sauce with chicken ham, omelette - everything blanketed under mashed potato and vegetables.
It was a large slab of boneless chicken thigh meat. The dominant flavour was robust savoury tangy herby spice from the BBQ sauce. The chicken chop didn't travel very well and was slightly chewy when we ate it at home.
Between the thick spongy buns, there's a thick beef patty, fried egg, well browned caramelised onion & sauce, beef ham slices, cheddar cheese, etc.
The thick beefy patty was done medium-well. Quite sinewy, chewy but beefy. The fried eggs were nice and the best thing was the sweet savoury caramelised onion sauce. The bun was a tad too sweet for my preference. By street burger standards, this was pretty good.
Simple, no frills, full flavour Indonesian cuisine at 285 Changi Road.
