Heavens is the most famous appam and thosai stall in Singapore, going by media coverage and rave reviews.

I got out of bed early, excited to taste Heavens' appam.

Arriving here slightly before 8am, there was just a short queue of 4 or 5 people ahead of me. The stallholders were busy making thosai on the sizzling griddle.

As I reached the front of of the queue, I saw a small stack of appam which were pre-made i.e. not made on order. As I was doing a research project on appam, I stuck to my original plan of ordering Heavens' classic appam.

I like the design of Heavens' appam. The rice cake in the middle was relatively small and shallow, so most of the appam consisted of its broad frilly fringe like a bowl shaped frisbee.

As the appam was pre-made, the spongy rice cake middle was neither warm nor fluffy. It tasted gently savoury and tangy. Eating it with red sugar and / or grated coconut gave it some sweetness for balance.

On its own, the fringe also tasted savoury tangy. It was not crispy but slightly chewy.

Next time, I shall go for their cheese or egg appam which I believe would be made on order.
