Day Night & Fong Sheng • Contrasting Fried Kway Teow Styles @ Bukit Merah Central 日夜炒粿条 • 风盛熟食(炒粿条)


Singaporeans love their fried kway teow and most hawker centres have one, if not two char kway teow stalls. At Bukit Merah Central Food Centre, there's Day Night (yes it is called Day Night) and there's Fong Sheng fried kway teow, both have their loyal following judging by the daily queues at both stalls.

Day Night Fried Kway Teow a three decades old stalwart here, has lots of accolades wallpapered across its stall front and is often mentioned in social media. It's also one of the stalls with the longest lunch time queues at Bukit Merah Central Food Centre.

So, I started my day's CKT tasting adventure at Day Night.

It's quite a generous portion for SGD3.50. 

The mound of slender rice ribbon noodle (pad Thai type kway teow) and yellow mee had just the right level of moistness for me. The slender noodles and mee were mostly broken from vigorous frying which imparted a mild balanced savoury sweet lardy flavour to the carbs, but however lacked that coveted wok hei. The dish wasn't overly greasy which would please most people (nowadays).

Cockle, fish cake, lup cheong (Cantonese wax sausage), chives, taugeh (beansprout), egg were all there which I appreciate 🙏 Boss sprinkles a few small crispy crunchy lard croutons at the side of each serving. It's a signature of Day Night.

There's even a half calamansi lime. Day Night's fan swear the sour zest enhances the taste of fried kway teow but I didn't won't use it 😝

This would be a good fried kway teow for people who like things in moderation and not take things to extremes. Personally, when I go for fried kway teow, I suspend caution for a while and prefer no holds barred flavours which means lots more lard and wok hei 😬

Steps away from Day Night is another fried kway teow stalwart at Bukit Merah Central, Fong Sheng. Both fried kway teow stalls are about the same vintage, about three decades old and have their own loyal following.

The queue at Day Night is usually longer but not always. Sometimes Fong Sheng fans come out in greater force 😁

Feng Sheng's fried kway teow is decidedly wetter - you can literally see the dark sauce pooling at the bottom of the white plate. Pricing is the same as their competitor - $3.50 and $4.50.

Fong Sheng uses the broader type of rice noodle which I prefer. They don't break as much and are more slurpy, especially when wet.

The rice noodles and yellow mee were enveloped in a drippy sauce that was relatively robustly sweet savoury, sweet leaning compared to Day Night. But, lard and wok hei played truant 🙄

Egg, taugeh, lap cheong, fish cake were present. Lard and chive were missing which I missed for their aroma and taste. Fong Sheng's fans see their absence (especially the lard) in a positive light though.

Piping hot fried kway teow but no wok hei. Wet and rich with sweet savoury flavours but it was almost like tossing noodles in hot sauce instead of stir frying the noodles to infuse flavours into the strands. Putting that aside, the concoction is actually tasty as Fong Sheng's sizeable fandom attests.

So at Bukit Merah, the options are pretty straightforward - want lard go to Day Night, don't want lard go Fong Sheng.

When I am in Bukit Merah, I might pick these stalls when I am in the mood for fried kway teow though they're not the type of fried kway teow which I'll jio (gather) people for a makan (eating) date.
