The fun 粉 (broad rice noodles) were generic, factory supplied. Neither the smoothest nor softest. In fact, it had the subtle "rubbery" feel of mass produced fun. There was little, if any rice taste or fragrance.
But, the sauce changes everything. Ah Wah had them splashed both the spicy and savoury sweet sauce over the fun (and yam cake), then wrapped it all together in a bundle.
The umami savoury sweet and mildly spicy sauce melded together into a unique concoction which is quite (utterly for some) addictive.
I love it.
Pro tip: Actually, I had Duo Ji's chee cheong fun a few times before and never really liked it. The generic noodle aside, the sauces didn't really leave any deep impression (other than the addition of fermented prawn paste or hae ko 虾膏). That's because I had the sauces at the side as a dip.
It doesn't work that way.
The trick is to blend the umami savoury sweet and spicy sauce together with the fun into an ugly jumble and eat the mess together in each mouthful. The umami, savoury, sweet, and spicy flavours meld together into a complex blend with depth of flavours.
It's darned uglylicious good 😋
Worth the queue, even if it is generic fun as its all about the signature house made sauce.
